I lost my worlds after re-installing
So anyway my game would not work. It said something like "Can not sign in. Check your internet connection and try again." But my internet connection was working. So, I was locked out of my game.
A post in the support center recommended uninstalling my older version of Minecraft: Education edition, as having more than one version could cause this error. And it worked. But at what a cost. I have none of my worlds. None of them! I looked in the game files for my world, but the "worlds" file was empty. So, I redownloaded the older version and opened it up. Still no worlds.
I'm feel regretful but there is nothing else I could have done. I couldn't have backed up the world files when I couldn't have even accessed the game; or could have I? Idk if I even want to know the answer to that.
If anyone could help me it would greatly be appreciated.

And now I'm also stuck with 1.17.30 minecraft education edition. Help!

Is it a personal account or a school managed one?
What do you mean you are "stuck with 1.17.30", what happens when you try to uninstall?

A lot of us ran into similar problems this update, because when the auto-update failed, we went to manually download from the downloads page, and the link to download the desktop version had been removed, with only the link to the store version, and the language on it wasn't particularly clear. While I understand the need to streamline, I hope they roll that decision back as it led to a lot of situations like this one with stuck installations and missing work.
Downloading the store version while the desktop version was already on your system gives that "Can not sign in error", but my recommendation would be to delete the version you weren't already using rather than the oldest one (you can tell which is which because in the uninstall/repair menu, the store version has the author and the desktop doesn't -- otherwise the icons/names are identical.)
However, if you're like me and had the desktop version before, it often leaves the world file folders behind when you uninstall unless you manually delete them, so you can go digging to see if they're still there. It will look like a bunch of folders with gobbledygook as names. On the desktop, you can find them here: C:\Users\yourusername\AppData\Roaming\Minecraft Education Edition\games\com.mojang\minecraftWorlds .In the store version, it's in Local instead of Roaming, IIRC, which is why your worlds aren't there when you switch versions -- they're stored in a different location -- so I'd check both if you're not sure which version you were using before. I learned the hard way to backup everything before I start messing around with installations by zipping everything that's in com.mojang and parking it someplace safe, which gets my resource packs, too, but you could get by with just zipping up the minecraftWorlds folder if you don't use resource packs.
