If you didn't sign and name the book, perhaps there is more than one book&quill in the student's inventory . . .  also, make sure it's the same exact world

I would not expect shaders to work on MCEE at this time.

test it by adding bone meal to the seeds -- melons need water and also a spot next to the seeds to grow the actual melon

Correct, the display name above your player's head is controlled on the Microsoft Admin Database page.

Yes! As long as the users are using the same version of the game and are in the same @domain, you are good to go!
