My students will begin creating zoo exhibits in the next couple weeks. I was going to have a class world but is there a setting that doesn't allow them to tinker with someone else creation? Or should I just have them create it in their own world and share with me?

  There is a world someone created with individual build areas. When students join, they are automatically teleported to an individual build area. This can be a great solution for some classes, especially if you want to be in the world with the student to supervise or assist.

  I find I am happier with individual worlds, but in either case, students can share their work with you, either by labelling their area with a board, in the shared world, or by exporting Book & Quill in an individual world.
