Development documentation
I would love to see somewhere, some documentation for things having to do with lesson world/map/level development. (the way there is a bedrock development site with documentation on how different things work)
There are some things that Educaiton Edition has that don't seem to make it into the bedrock development documentation but it would be VERY helpful to teacher who want to creat custom lesson worlds to have documentation on how to utilize things like the education.json file for instance to help customize permissions and the code builder tutorial for the world.
It would save so much time if that documentation and syntax for how to properly utilize the file were available to teachers. It takes so much time to try to figure these things out by trial and error and it isn't as if teacher have unlimited time to tinker with these things to figure out what is possible.

It would be so nice!

I agree completely! Thank you for this feedback, it is definitely heard and we're exploring how best to accomplish this. For now, there are some Education Edition things that have been added to the Bedrock Microsoft Docs site, such as NPCs. Hopefully, we'll be able to add things such as this soon!
