Mob diversity

I think it would be really cool to have additional mob diversity for the kids to explore and see other animals. I have this idea to have students research an animal then use what they have learned to build an enclosure or habitat that meets the needs of the animal in a class zoo. However, as far as I can tell the animals I can spawn for them is pretty limited. Someone please let me know if I am missing something that gives me more options.
