  this same thing happened t me just now. and we were just getting ready to go to the end and now we have to start from scratch on a whole different world

  Your maps are stored here if you are playing on a PC:

  C:\Users\[USERNAME]\AppData\Roaming\Minecraft Education Edition\games\com.mojang\minecraftWorlds

  You can manually copy that folder periodically to make a backup.  

  Or better yet, make a scheduled task that makes a copy periodically.
