Capturing Video of Gameplay
Both my students and myself would love an easy method of capturing video of Minecraft Education Edition gameplay to create our own video summaries to share with the global community. While capturing pictures is possible within the game and using keyboard shortcuts, there isn't a simple way of doing video captures. We've tried using the "Windows logo key + G," but the message "This game doesn't allow recording" appears (see image attached). We know that software, like OBS (Open Broadcaster Software) can be used, but if there was a more accessible method, it'd be awesome for younger students and for students new to Minecraft. If anyone has any ideas, or can re-direct me to a message board that answers my query – please let me know!

It is a good suggestion - we know that the Windows Logo + G combination can be finicky and difficult to reproduce (this feels like a tech forum question at the heart of it), as it works well for some systems and not others, and even works for some instructors in other versions of Minecraft, but not Education Edition installed on the same machine.
Still, we'll take this suggestion to heart, bring it to the team, and see what we can do to implement a solution that works reliably and consistently within the software if possible. In the meantime, there are software programs that can help with this (but in the interest of staying impartial, we throw debates of "the best one" to our community at large), as we know a solution on our end isn't always as easy as "just adding a few lines of code".

Try using the DVR option that is included in XBOX. It Works for me.

Windows G worked for us last year with version 1.12. Haven’t tried it yet with 1.14. I can help diagnose settings with you if you like.
